Thai fish balls

Really tasty Thai inspired fish balls which make for a lovely light supper.
500g firm white fish fillets
1 tsp Thai red curry paste
½ tsp grated lime zest
½ tsp fish sauce
3 shallots, diced
1 tbsp vegetable oil
Sweet chilli sauce, to serve
1 lime, sliced
Bunch coriander leaves
Preheat oven to 180°C/350°F/Gas 4.
Place the fish, curry paste, sugar, lime zest and fish sauce into a food processor and pulse until a rough paste has formed.
Transfer fish mixture to a bowl and stir in the shallots.
Roll 1 tablespoon of the fish mixture into a ball and place on to a plate. Continue with the rest of the fish mixture.
Heat half the oil in a large frying pan over a medium heat. Add the fish balls and cook, turning often, for 5 minutes. Transfer to a baking tray and repeat with the remaining fish balls.
Bake in the preheated oven for 10 minutes.
Serve with lime, coriander and sweet chilli sauce.
Add a side of noodles for a more filling meal.
