Spinach and pine nut gnocchi

Gnocchi is one of the most wholesome pastas available and with the combination of the spinach and pine nuts, this dish is truly an Italian delight.
400g fresh gnocchi
2 tbs butter
2 tbsp pine nuts
2 garlic cloves, finely chopped
240g fresh spinach, washed and drained
¼ tsp freshly ground black pepper
1 tsp olive oil
50g parmesan cheese (or vegan alternative), finely grated
Cook the gnocchi according to the directions, drain and set aside.
Heat the butter in a large non-stick pan over medium heat.
Add the pine nuts and cook for 3 minutes or until butter and nuts are lightly browned, stirring constantly.
Add the garlic and cook for 1 minute.
Lastly, add in the gnocchi and the spinach and cook 1 minute or until the spinach wilts, stirring constantly.
Season with pepper, add the teaspoon of olive oil and mix gently.
Sprinkle with cheese and serve.
