Lovely, light and healthy muffins loaded with fruit and nuts.
Vegetable oil, for greasing
80g oats
3 egg whites
1 tbsp flaxseed/linseed
2 bananas
Handful mixed berries
25g almonds
25g walnuts
25g pumpkin seeds, finely chopped
Pinch baking powder
1 tsp natural vanilla essence
Preheat the oven to 180°C / 350°F / Gas mark 4.
Grease a 12 muffin hole tin with a little vegetable oil
Use a food processor to blitz all ingredients together until smooth.
Spoon in the mixture to fill the muffin tray holes nearly to the top and cook for 20 minutes or until risen and golden.
Allow to cool before turning them onto a wire rack and serve when warm or cold.
