Easy pizza margherita

For the base:
300g strong bread flour
1 tsp instant yeast, from a sachet or tub
1 tsp salt
1 tbsp olive oil, plus extra for drizzling
For the tomato sauce :
100ml passata
Handful fresh basil or 1 tsp dried
1 clove of garlic, crushed
For the topping:
125g ball mozzarella , sliced
handful grated or shaved parmesan
Handful cherry tomatoes halved
Handful basil leaves (optional)
To make the base: Add the flour to a large bowl, then stir in the salt and the yeast.
Make a well in the centre, pour in 200ml warm water and the olive oil and bring together with a wooden spoon until you have a soft, fairly wet dough.
Turn onto a lightly floured surface and knead for five minutes until the dough is smooth. Cover with a tea towel and leave to one side.
You can leave the dough to rise but if you like a thin crust then it isn't necessary.
To make the sauce: Combine the passata, basil, seasoning and crushed garlic.
To roll out the dough, divide into two balls. Use a rolling pin to roll out onto thin even circle and place on baking trays.
Preheat oven to 200°C*/400°F/Gas 6.
Smooth the passata sauce over the pizza bases and cover with cheese, tomatoes, olive oil, herbs and seasoning.
Place in the oven to bake for 8-10 minutes until the cheese has melted and the base is golden in colour.
