Chicken, pumpkin and cheese pasta bake

This pasta bake is packed full of delicious flavours.
1/2 large butternut pumpkin, peeled and cubed
2 tbsp olive oil
500g rigatoni pasta, cooked
4 tbsp olive oil (additional)
3 chicken breast fillets, diced
3 rashers, diced
70g butter
65g plain flour
960ml milk
1 tbsp chicken stock powder
165g cheddar cheese, grated
55g parmesan cheese, grated
Preheat the oven to 180°C or gas mark 6.
Sprinkle 2 tbsp of the olive oil over the pumpkin and bake in the oven for 30 minutes.
Heat the rest of the oil in a frying pan and cook the chicken on a medium heat until golden.
Once cooked, add the bacon to the pan and cook for a further 4 minutes.
Remove the bacon and chicken and use the pan to melt the butter. Add the flour and cook for 3 minute, stirring constantly.
Pour in the milk a little at time until the mixture is smooth. Add the cheese and stock.
Combine the chicken, bacon, pasta and pumpkin to the sauce.
Pour into a large baking dish and sprinkle with parmesan cheese.
Bake in oven for 25 minutes until the cheese is golden on top
