Cheesy potato cakes

This dish is a great way to use up any leftover mashed potatoes.
420g mashed potato
55g cheese, grated
65g corn, cooked
1 egg
1 tsp butter or oil
Mix the potato, cheese, corn and egg together in a bowl
Divide into 8 portions and shape into cakes.
Melt the butter in a frying pan and cook the cakes for 10 minutes flipping half way.
Serve as a snack after school or as a vegetable dish with the main meal.
