Cheesy potato bake

This cheesy potato bake is really easy to make and is a great side dish for chicken.
2 green onions, chopped
6 large potatoes, peeled
1 tsp olive oil
1 onion, finely chopped
2 rashers bacon, rind removed and chopped
200ml milk
Salt and freshly ground black pepper
200g grated cheese
Boil the potatoes in a saucepan until tender. Once cooled, cut into 2cm cubes (approx).
In a separate pan, heat the oil and fry the bacon and onion until slightly brown.
Combine the onion, bacon, milk and potatoes. Season with salt and pepper.
Pour the mixture into a lasagne or casserole dish and sprinkle with grated cheese.
Preheat the oven to 180°C/ gas mark 6
Bake the potato dish for 30 minutes or until the top is a golden brown.
Leave to stand for 5 minutes before serving.
